Keeping this post to the essentials. Like the cookies. Just basics. I modified this simple recipe from the recipe posted on another gluten free blog. These cookies were deliciously rich and were a real hit at the bake sale i took them to.
My modifications were nothing elaborate. Instead of using one full cup of sugar, I substituted half a cup of almond meal and half a cup of sugar. They were perfectly sweet for my taste. I also reduced the baking time by about 1 minute because our oven is hot, hot, hot! Keep an eye on them and they will be fine.
Another helpful tool here was the food processor. This is a lot of almond butter (especially if you’re doubling the recipe) and a very gooey batter.
I can tell you one thing, these cookies will be making an appearance here again soon.
